For breakfast today, I tried something new. When we first started our whole clean eating life we purchased several whole grains like whole wheat long brown rice, whole wheat short brown rice, and organic quinoa. Being familiar with rice we opted to use that instead for the majority of our meals. The more reading I do, I find that quinoa is way better for you and is considered a super food! Compared to other grains, quinoa is higher in calcium and protein.-If you're thinking about switching over to a more plant based diet then quinoa is a must! We made what I like to call "breakfast quinoa."
Quinoa is cooked 1 part quinoa 2 parts water/milk. I really wanted to use coconut milk but I was out so I worked with water. **remember to soak the quinoa preferably overnight** Here's how I did it:

Ingredients:
1 Cup quinoa
2 cups water
1 tsp vanilla extract
2 tsp brown sugar
5-6 strawberries diced
1/2 banana
Handful of raspberries
Dash of cinnamon

Step 1: Bring water to a boil (don't add salt)
Step 2: Add quinoa and return to a boil. Once its boiling cover with a lid and turn it down to simmer.

It only takes about 20 minutes to cook. At 10 minutes in I added the vanilla and brown sugar. Gave it a stir and let it sit for another 10 minutes or so.

While you're waiting on the quinoa to finish up, start preparing your fruits. Don't forget to rinse them well! Many people forget thats the most important part!

Once the quinoa is finished, serve it hot! Put a little milk/almond milk/coconut milk in and throw your fruits on top.

If you're not used to the taste, its a little bland..next time I'm definitely cooking with the coconut milk and I might add some baked shaved coconut slices!
